Homemade frozen yogurt with mini candy bars bites



I just brought a frozen yogurt maker from amazon{ Cuisinart ICE-21R Frozen Yogurt-Ice Cream & Sorbet Maker, }and could not wait to try it out. I had some goodies lying around so I added them to the recipe. {By goodies i'm mean mini candy bars} I got the idea from my nephew. So he is my co-author of this recipe and my food inspiration . And he will eat just about anything. He wanted to add the craziest things to recipe for some reason. But, we settle on candy bars. This is a very delicious and easy frozen yogurt recipe.

Ingredients
3 tablespoons of light corn syrup
2 cups of plain whole-milk yogurt
2 cups of non-fat or reduced fat greek yogurt
1/2 cup of super fine sugar
1 bag mini candy bars






1.Whisk both yogurts, the sugar and corn syrup in a bowl until combined. Pour into an frozen yogurt maker or ice cream marker, and follow the directions.

2.If you want soft serve , then  you should serve it right for the yogurt marker. 

3. Place frozen yogurt in large bowl, chop mini candy bars and fold half  gently into yogurt.


4. Place frozen yogurt in small serving dishes, and  then take remaining bars and place strategically onto frozen yogurt.  some 


For a firmer yogurt, remove from marker and into a covered container and freeze for up to 2 hours. Then  place strategically onto frozen yogurt.

Chocolate Oreo bundt cake with marshmallow fluff frosting



Sunday night dessert: Chocolate Oreo bundt cake

It's a rainy day here in New york city, the city is upset about the knicks losting last night. Yep, again the pacers kick our butts. It really sucks, we can't make it out of the second round. So, i'm going to eat my delicious oreo bundt cake to make me feel better. Oreo's always make me feel better. It has the best gooey marshmallow frosting.{by the this is the easier marshmallow frosting ever !}It reminds me of my childhood. Dunking oreo's in a delicious glass of milk. Mmmmm..... so good. 






Pan: bundt 
Preheat oven: 350
Prep. Time: 30 mins
Bake: 25-35 mins

Oreo cake

2 cups of sugar
3/4 cup of Hershey cocoa
1 cup of boiling water
1 cup of milk
2 eggs
1 3/4 cup of flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 cup of vegetable oil
2 tablespoons of vanilla extract
1 teaspoon of salt
 Oreo crushed 1 or 2 packages

Marshmallow fluff frosting
16 oz. of marshmallow fluff
1 cup of butter
1 cup of powdered sugar
teaspoon of vanilla extract



1.Preheat oven at 350
2.Crush 1- 2 packages of oreos. You want chunks not crumbs. and set aside.{Save some for the frosting.}
3.In bowl, stir together sugar, flour, cocoa , baking powder, baking soda, and salt. Add eggs, milk, oil and vanilla and blend with mixer on med speed for about 2 mins.
4. Stir in boiling water,  then add crushed oreos,  pour into bundt pan that is lightly greased. Bake for 25-35 mins or until toothpick comes out clean. Let cool.
5.Beat butter and powdered sugar until fluffy. 
6.Mix in  marshmallow fluff and vanilla by hand. 
7.You can pipe it or pour it on bundt cake.  I pour mine in pic above. I put marshmallow frosting in microwave safe bowl, and heated it for 15-20 seconds to make it easier to pour or spread. Don't not over heat.
8.Take crushed oreo's and sprinkle on top and serve when ready.

Half and half chocolate cookies


Cookie friday: Half &half chocolate cookies



Cookie lovers you must try this recipe. If you ever had a craving for a cookie, but could not decide on what kind you want.  Hmm.... maybe  something super chocolatey or just simple and delicious chocolate chip cookie. Why not put the two together?  You're kids will love making this recipe with you. Very easy to make. I like chilling my cookie dough it spread better when it bakes.
Just take a spoonful of each cookie dough and and form into a ball , one side of the ball chocolate dough, the side chocolate chip dough.
Pop the combo on the cookie sheet and bake 10-12 mins. It's cookie friday have a great weekend !







Take a spoonful of each dough and form a half & half ball.

Preheat oven: 350
Prepared time:45 mins
Bake: 25-26 mins

Chocolate cookie
  
1 cup of butter softened 
1 cup of white sugar
1 cup of brown sugar
2 eggs
2 teaspoons of vanilla
2 cups of all purpose flour
1/2 cup of cocoa powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of semi-sweet chocolate chips
1/4 cup of powdered sugar




Chocolate chip cookie
2 cups of flour
1/2 teaspoon of baking soda
1 1/2 sticks of butter
1 cup of brown sugar
1/2 cup of sugar
1 large egg
1 egg yolk
2 tablespoon of vanilla
1 1/4 cup of semi-sweet chocolate chips






1.Preheat oven at 350.

2.You will need two large bowls. Chocolate cookie dough: In one bowl, beat butter, white sugar and brown sugar with mixer. Beat 1 egg at a time. Then add in vanilla.Combine flour, cocoa , baking soda, and salt in a bowl. Stir flour mixture into butter mixture until just incorporated. 
3. Repeat the same steps with the ingredients for chocolate chip cookie dough.

4.Then chill both cookie dough for an hour.

5. Take one spoonful of each dough and form a ball. Depending on size of cookie you want.  Drop balls  2 inches apart on cookie sheet.        
 {Use parchment paper or lightly spray pan.}

6.Bake for 10-12 mins or until lightly golden brown. Take out and cool.

Pink Lemonade cupcakes






Want to try a delicious fun and easy recipe ? This is also a good party treat too. All you need is white cake mix and pink lemonade juice  which  you can find anywhere. I like minute maid. But you can use any kind you want. Pink food coloring at the supermarket. Or icing coloring you can get at amazon or any arts and craft store.




Ingredients


Cake

2-5 pink/red  food coloring
1 package of white cake mix {follow box directions}
1/3  cup of pink lemonade juice 




Frosting
1 1/2 cup of powder sugar
1/2 cup of unsalted butter soft
1 pinch of salt
1/4 of cup of whipping cream
2 teaspoons of pink lemonade
2-3 drops of pink food coloring
1 drop of lemon extract


Steps

1.preheat oven at 350. 
2. Follow box directions.  Add 1/3 cup of pink lemonade. Depending on what color pink you want add 2-3 drops of food coloring. and mix.
3.Spoon batter in cupcake liners and bake for 15-20 mins or until toothpick comes out clean.
4.Take out and cool.

5.Frosting: In a bowl, beat together on low speed with a mixer, sugar, butter, and salt. Mix until smooth and creamy.
6. Add lemonade, lemon extract , 2 drops of pink food coloring and beat until light and fluffy.
7.Frost cooled cupcakes. Sprinkle with sprinkles or colored sugar.

Cake mix glazed lemon donuts













Get out those donut pans. And check out this
delicious cake mix lemon donuts.
With a nice delish lemon glaze.
The wonderful thing about this recipe is
you can serve them warm or semi-warm. Hope you will enjoy it







Pan: Donut pan
Preheat oven: 350
Bake: 8-12 min




Ingredients
1 box of lemon cake mix
1 egg
3/4 cup of milk

Glaze1 1/2 cups of powdered sugar
 lemon juice { about 1 lemon}


1.preheat oven at 375. Lightly spray donut pan.
2. In large bowl, mix lemon cake mix, 3/4 cup milk and egg. Stir until smooth.
3.Pour batter in donut pan and bake for 8-12 mins. Take out and cool.
4. Making glaze. whisk together sugar and lemon juice until nice smooth and shiny.
5.Dip donuts one at a time into glaze and place on cooling rack or parchment paper until ready to serve .

Brownie chunk cookie sandwiches

Cookie friday: Brownie chunk cookie sandwiches



It's cookie friday and I can't wait for everyone to try this recipe. So yummy. Soft and chewy brownie chunk cookies with a delicious chocolate cream cheese filling. I will be eating this tonight while watching the nba playoffs  . 
 You can make the cream as dark or light as you want, by adding more cocoa power. 



Pan: 2 cookie sheet
Preheat oven: 350
Bake: 8-11 mins
Overall time:2 hrs 45 mins.

Chocolate cream cheese filling


Ingredients

Brownie cookies
1 pound of dark or semi-sweet chocolate chopped
4 large eggs
1 1/2 cups of brown sugar
1 teaspoon of vanilla
1/2 teaspoon of salt
4 tablespoon of unsalted butter
1/2 cup of flour shifted
1/2 teaspoon of baking powder
12 ounce bag of semi-sweet chocolate chips



Instructions 

1. In large bowl place over saucepan of simmering water, melt chopped chocolate with the butter, stirring until smooth, about 5-7 mins.

2. In a second large bowl, using mixer, beat the eggs with sugar at med. speed until thick and pale 3-5 mins. Beat in vanilla and salt. Fold in the melted chocolate, then fold in flour and baking powder with rubber spatula. Stir in the chocolate chips. Scrape down sides of the bowl, then cover and freeze for an hour.

3.Preheat the oven and line 2 baking sheet with parchment paper.
Using a med. cookie scoop drop batter on cookie sheets and bake for 8-11 mins don't over bake. Take out and cool.





Chocolate cream cheese filling
16 oz. of cream cheese softened 
1/2 cup of powder sugar
3 tablespoon  cocoa powder
1 teaspoon of vanilla

1. In a bowl mix cream cheese and powder sugar, blend well.
Add in cocoa powder in at a time, stirring after each  addition .
Then add in vanilla. {You can add in more cocoa powder if you want a darker filling} Chill for 30-60 mins.



After cookies have cool and filling has chilled, it's time to put the  delicious combos together, just before serving.  Drop 1 or 2 tablespoon of the filling on flat side of the cookie, place another on top and repeat. Enjoy.

Caramel cheesecake dip



This is a quick and easy delicious dip recipe. You can serve it with fruit or shortbread cookies. Its a perfect party snack.








Ingredients
1 cup of cream cheese {soft}
1/2 cup of cool whip
1 teaspoon of vanilla
3 oz.  caramel
1 teaspoon of powdered sugar


Instructions 

1. In a bowl mix together with a mixer, cream cheese and cool whip until it's smooth with no lumps.
2. Add in sugar, vanilla and caramel. Again, mix together until nice and smooth.
3. Chill until ready to serve. I add extra caramel drizzle when serving.
